Pairing Wild: Passalacqua Winery and the Spirit of the Field

There is a rhythm that connects the field to the table - a story carried through every hunt, every meal, every glass raised at day’s end. At Field Traditions, we believe in honoring that rhythm, and we’ve found a kindred spirit in Passalacqua Winery and their Pair Wild initiative.

A Philosophy Rooted in Place

Family-owned and based in Healdsburg, California, Passalacqua Winery has always approached winemaking with respect for land, heritage, and the experiences that bring people together. Their Pair Wild initiative was born from that philosophy: a commitment to pairing their handcrafted wines with wild game, dishes steeped in season and tradition.

Just as hunting teaches us patience, stewardship, and reverence for the land, winemaking requires the same care. From soil to cellar, Passalacqua brings an intentionality that mirrors the values of the field - a belief that the best things take time, and that they are best enjoyed in good company.

Pairing Wild Game with Fine Wine

The Pair Wild program invites hunters, cooks, and wine lovers alike to experience wine as more than an accompaniment. Each pairing is designed to elevate the natural richness of game - from the depth of a venison stew to the slow warmth of a pheasant cassoulet.

It is a philosophy that transforms meals into rituals. A dish from the field, a bottle from the vine, and a table gathered in appreciation. This is where tradition lives on - in the simple act of sharing.

The Field Traditions Connection

At Field Traditions, our own ethos finds harmony with Passalacqua’s. Both brands celebrate a heritage of craft, utility, and respect for the land. Just as our leather goods, barware, and field pieces are built to endure, Passalacqua’s wines are crafted to be savored - not hurried, not wasted, but remembered.

This season, we’re proud to spotlight their Pair Wild initiative alongside our own November table. For us, it’s more than a collaboration. It’s a shared story: one of heritage, gathering, and the freedom found in the field.

Bringing Field and Table Together

Whether it’s a glass of Passalacqua Red poured beside a dish of game cassoulet, or wine uncorked at the lodge after a day on the prairie, Pair Wild reminds us that the field and the table are inseparable. One provides for the other, and both are made richer when shared.

This is the spirit of Passalacqua Winery. This is the story of Pair Wild. And it’s one we’re proud to tell together.
